Years ago a group of California Winemakers were taste testing 14 barrels of Pinot Noir.
As it turns out, you really can’t taste that much of a good thing without a little help.

Taste testing is a key step in the winemaking process that helps to create the best blends of each vintage. Frustrated with tired taste buds, a group of winemakers got together to create a perfectly balanced and clean refreshment that would allow them to taste everything.


They carefully studied how taste works and took inspiration from traditional palate cleansers, like sorbet. The result: SanTásti the Palate Cleansing Beverage… a professional tasting aid that was called “the greatest invention for wine since the oak barrel.”


The beverages would go on to help people explore flavors in tasting rooms and to be shared at all of California’s Central Coast’s top wine, food, craft beer and spirit events. In this crucible of gastronomy new flavors were tested and the crisp blends evolved.

Nicole holds a degree in Wine and Viticulture with a concentration in Enology and Agribusiness from Cal Poly. She honed her winemaking skills with the hands on experience as the Cal Poly Winemaker. Nicole was responsible for crafting several award winning wines and establishing the standard for future vintages. Her skills in sensory analysis and attention to detail allowed her to take her idea for a better water from concept to reality. After winning first place in Cal Poly’s Innovation Quest Nicole began building the foundation for Pürtoniq.




ANDREW MACALUSO

Co-founder

Andrew also holds a degree in Wine and Viticulture with a concentration in Enology and Agribusiness from Cal Poly. Before studying winemaking, Andrew’s love of science lead him down the path of Chemististry where he developed lab and research skills that lead to the creation of the first Pürtoniq formula. Aside from an affinity for the sciences, Andrew has been an entrepreneur since he was 8 years old when he made his first business, a soda machine.
